Weekend Highlights : I like to eat, eat, eat

Last weekend was jam packed - a wedding, a 5K (recap here) & meal prep left me with not much time for sleep & I spent all week feeling like I was playing catch-up. With no big plans on the calendar for this weekend I was content to just hang out, rest up, & enjoy the weather wonderment that is central AC.

I figured I would share some snapshots of my weekend, but, I looked through them & 85% of them are things I ate...so, Weekend Recap : I like to eat style. I'm Linking up with Holly & Tricia to share.

Friday was low-key...grocery shopping + homemade pizza. I used garlic naan, BBQ sauce, onion, bell pepper, ground beef, cilantro, pineapple, sriracha & then topped it all off with feta & Italian shredded blend. It was so good I made one the next day for breakfast too.


Dinner was a winner on Saturday. I made enchilada lasagna, layering corn tortillas, enchilada sauce & a mixture of green chiles, brown rice, pinto beans & chicken. Plus some cheese in between each layer. I won't claim it was healthy...'cause I did use a whole bag of cheese. Whoops. But it got the BF seal of approval. Topped with an unsolicited, "This is the best meal I've had all week".

And finally, the "Let's pickle everything" craze, that started last week, is going strong. I cut up a watermelon to eat this week, and the BF snatched up the rinds to make pickled watermelon rinds. We're domestic. :)

Saturday morning was my usual group run with Pro Bike + Run. I had planned on 8 miles, but the heat & humidity made it easy to stop after 5 miles. So I did. #NoShame


After a lazy afternoon & a belly full of enchilada casserole it was time for a hike. I'm running the Two Face 10K on August 14th. A race that involves a 10K road race, followed shortly by a 10K trail race. I've chosen to double up. The trail course was just released, so I recruited some friends to hike it with me last night.


Except, we got "lost"...not that we couldn't find our way back to the car, but just that I realized at about mile 4 of our hike that we weren't on the trail we were supposed to be. Oops. All smiles...probably because I managed to snap the picture just before I told them we were lost. :)


This whole getting lost bit really seems to be a theme of mine with trail running. IDK what it is. So, we went off-roading & made our way down to the road to get back to the car before dark.


Sunday I made PB Fingers Double Chocolate No Bake Icebox Cake  - I gluten-ized it, by using regular old chocolate chip cookies + added bourbon to my whipped cream, 'cause I'm a grown-up. But seriously. The next time you make homemade whipped cream, skip the vanilla & add a few tablespoons of bourbon. I haven't cut into it yet, it's chilling in the fridge, but I'm squeezing in this post before I head off to game night. I'll post a pic on Instagram & let you all know the verdict. But I'm betting it'll be delicious.

  1. Hah! I wrote about food too - must be something in the air! I would definitely get lost on a trail run. It's hard to pay attention to the trails and run them at the same time!

    1. That must be it. I also tend to run with my head down on the trails to make sure I'm not tripping or falling over anything.

  2. I have never had pickled watermelon rind, although now I kind of want to try it. I like pickled things. The weekend went by super fast, filled with grocery shopping, laundry (boring) running and riding horses with the kids (fun)

  3. Some impressive cooking this weekend! I've never tried pickled watermelon rinds or bourbon in my whipped cream. I'm going to keep both of those in mind :)

    1. Bourbon whipped cream is delicious! I usually add some bourbon or cold coffee to mine. Gives it an extra flavor burst! Especially if you're adding it to anything chocolate. Mmm.

  5. Oh! Thanks for the tip that the course for the trail race in Two Face was released. I want to give it a try too but I know I'll get lost. I tried to run that same trail route we did by the pool a second time and for the second time got lost. There's just too many trails! I might try a version of that enchilada bake. Sounds awesome!

    1. The enchilada bake was awesome. Especially since I hate rolling them up. This wasn't necessarily less time consuming, but didn't require the rolling & stuffing process.

  6. Okay I saw that icebox cake recipe on Julie's blog and it looks sooooo good! I'm hoping it tastes as good as it looks:) And the one thing that always makes it on my weekend to-do list is a Sunday afternoon nap. I know, pretty important huh? Haha

    1. OMG SO GOOD. I used off brand Chip's Ahoy, made my own whipped cream, but added bourbon. And essentially doubled it to make it in a 9x11-ish size pan. It got HOUSED at the party I went to.

  7. That enchilada bake sounds awesome - IMO, you can't add enough cheese! A 10k on the road followed by a 10k on the trails sounds awesome - can't wait to read more about that!

    1. I tend to agree. Though I've never used a whole bag in one sitting before, so it seemed like a bit much.

      I'll definitely make sure to write a race recap!

    1. We were cutting it close. I know how fast I hike, so I wasn't worried, but I didn't factor in that my friends might be slower than me.

  9. You always have the best pizza! When I got to the grocery store, I try to talk myself into getting Naan to make pizza, and never do! I must pick up some next time!!

    1. DO IT. It costs the same as like 1 pizza at Aldi. But, since I eat half a pizza in one sitting that's only 2 servings. But naan is built in portion control. I can eat the whole thing & my mind thinks I got more pizza.

  10. I was hoping to hear how the Two Face trail portion was. I'm only signed up for the road currently. I don't think that will change, but I was curious! The weather has been too swampy lately.. these runs have been sucking!! Happy Monday!

    1. Umm the part where I did manage to keep us on the right route was tough. The first whole mile was UPHILL. And I don't mean sort of uphill, I mean like winded while walking, ain't no way I'm running that sort of uphill.

    I am totally intrigued by pickled watermelon rinds as I'd never heard of them until one year when we were in Louisiana. I don't like pickles but I'm wondering if they might be a hit!

    1. I had never heard of them, but I mentioned to my Mom I was making them. She was so excited. She grew up down south & said they were totally a thing.

  12. My Mom used to make watermelon rind pickles! It was a long time ago. I'm not a fan of pickles but I did like her homemade sweet pickles. I'm super impressed you made homemade whipped cream. You are making me feel pure lazy with my lack of cooking. LOL. You might want to try that trail a few more times before the race. ;) Thanks for linking, Jessie.

    1. Whipped cream is so easy! Pour heavy whipping cream into mixing bowl. Mix until it looks like whipped cream, add some powdered sugar & vanilla (or bourbon) Haha. Actually the BF didn't have a mixer, so I used the blender & it worked just fine!

  13. I'm also all about the weekend shopping and prep! I try to fit in a long run in there as well. Looks like you had a fun hike even if you got lost..part of the fun of being on trails right?

  15. I have ZERO sense of direction, so people who can navigate even in the slightest without like, seven different phone apps blow me away. Also, I will now have hte apples and bananas song stuck in my head all day. Thanks for that.
