It has been a while since I checked in with a WIAW post. My eating has changed quite a bit since the end of my Whole30 in January. I'm still not certain I've found what works for me 100%, but I do know I'm going to keep searching & trying things until I find the balance I'm looking for.
My end goal is a rotation of meals that I know make me feel my best & keep me full until the next one, all while getting me the right balance of micros & macros. Is that too much to ask?
For breakfast, oh, for the past year and a half, maybe two, has been overnight oats.
Sometimes a smoothie if I'm lazy & sometimes a random bagel from the freezer, but usually overnight oats. I think it's time to mix it up, because I'm finally starting to get bored. Here's my attempt at muesli // mixing it up.
Lunch? That's anyone's guess. Wildcard I suppose. This week it was a big bowl of chili with beef & beans, topped with plain Greek yogurt, sprinkle of cheese, jalapenos & some crushed up tortilla chips. I could have eaten this 2 more times. Not because I was hungry, but it just really hit the spot.
Dinners around here? Well it depends on who is cooking.
Does anyone else have a BF // partner // spouse who just seems clueless as to what to eat?
The BF, he's a great cook. He can make pretty much anything you ask for, but he's always lost as to WHAT to cook. So he'll text & ask me. I'll make a suggestion, only to find out he has none of the ingredients. Sigh. Anyone else? Just me? Okay.
So sometimes, he cooks & I eat delicious tacos.
And other times I "cook" for one & eat a little more like this.

So, still trying to find that balance. Wheat thins & goat cheese for dinner probably isn't it. Who knows.

I LOVE honey goat cheese. Mmm.
My usual go-to for breakfast is overnight oats too. I keep thinking of trying one of those crockpot steel cut oat recipes but I haven't had a chance yet. If I'm feeling ambitious, I'll make a fritatta on the weekend and cut it into slices to eat for breakfast during the week. I get by without a snack between breakfast and lunch but I need an afternoon snack to get by between lunch and dinner.

Breakfast never keeps me full until lunch - I reach for my snacks between 1030-11 every day! Usually a piece of fruit or something. I love the creaminess of goat cheese - I also love feta cheese!
ReplyDeleteIf you can believe it, it was like 24 when I had feta for the first time. Life changingly delicious. I love adding it to salads or on top of a pizza. Mmm.

DeleteOoh, I love nachos or chips+cheese. My favorite go-to breakfast is a bowl of yogurt, nuts, nut butter, and fruit. Isn't it awesome that God gave us all this delicious food to keep us fueled for each day?
ReplyDeleteMmm. I usually add some jam // jelly to my yogurt if I eat it plain, but I'll have to try some peanut butter next time, ooh, or maybe both! PBJ yogurt!
DeleteOvernight oats are definitely an easy go-to for me. When I want a really good and filling breakfast (especially before a long run) I'll make a hash of potatoes, meat, eggs and spinach.

DeleteI love that two of your meals were Mexican food! That's a favorite of mine. I could eat tacos literally every day and never get tired of them.
ReplyDeleteDitto. Tacos are so flexible! And enchiladas too! Which realistically are probably on the menu for this weekend. So easy to toss together, fairly cheap & healthy too.

I was definitely that way for a while, but for some reason hot oatmeal just doesn't seem to keep me as full, even if I add the same stuff, I just don't know why.
DeleteFinding balance is a life long journey I find. We find it... and then we lose it. Over and over. But I'd say your goal is the best one to continually strive for.
